Toasted Paneer Sandwich


Ingredients for 1
Bread - 2 slices
Butter/Oil for applying on the bread slices

For the filling:
Grated/Mashed Paneer (Indian cottage cheese) - 100 gms
Finely Chopped Coriander - 1 tsp
Finely Chopped Green Chili - 1
Finely Chopped Onions - 1 tsp
Finely Chopped Tomato - 1
Finely Chopped Ginger - 1/2 inch (optional)
Pre-Cooked Green Peas - 25 gms (optional)
Oil - 1 tsp
Salt - to taste

Description
Heat the oil in a non-stick pan. Add onion and saute for a minute. Next, add tomato, ginger, green chilli, green peas and salt. Saute for a minute. Now add the grated paneer and mix well. Add the coriander leaves and mix well. Now take the mixture of the gas and let it cool.

Butter or oil the bread slices from one side. Spread the filling in between the non greased sides of the 2 bread slices. Toast the sandwich in a sandwich toaster or on a tava (griddle) pressing gently to seal the sandwich slices.

Serve hot with Tomato Ketchup or Dhania chutney as desired.

Notes
The same filling can be used raw, but avoid ginger in that.

You can variate this recipe by adding 2 more slices of bread. Apply green chutney on one side of a slice and sauce on one side of the other bread slice. Place the filling in between the clean sides of these chutney/sauce slices. Now place the 2 greased bread slices above and below the chutney and sauce slices to create a triple decker sandwich. Toast the sandwich in a sandwich toaster or on a tava (griddle) pressing gently to seal the sandwich slices.

The sauce and chutney slices give a colourful look to the sandwich.
